Chocolate Chip Cookies

 
Fresh, hot, chocolate chip cookies, right out of the oven. Yum!
 
It is cookie week at our house because we have family coming in town starting this Friday night. That means that we will have no time to make cookies next week, or at least not as many as I'd like to have on hand. Here is the staple of the cookie stockade.. Easy, peasy, yummy to the tummy chocolate chip:
 
1 cup sugar
1 cup brown sugar
1 1/3 cup softened butter
2 eggs
2 teaspoons vanilla
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups chocolate chips
 
This makes about 6 dozen cookies. Start by preheating the oven to 375 degrees. In a bowl mix the sugar, butter, egg and vanilla. Then add in the flour, soda and salt. Make sure that it's all mixed well before you add the chips. You could drop the dough by rounded teaspoonfuls about 2 inches apart onto an ungreased cookie sheet but I like to take each bit of dough and make it into a nice round, place it on the cookie sheet and gently press it down. That way I have a very consistent size and shape to my cookies. Then bake for 8-10 minutes or until light brown. Cool 2 minutes on the cookie sheet before transferring them to a cooling rack.
