Pap-Pap's Stuffing Balls

My grandfather loved stuffing. He especially loved the crusty part around the outside. He would complain that there was never enough crust so he came up with his own recipe. I enjoyed it so much at Christmas that I called my aunt for the recipe and here it is.

1 1/2 loafs of bread - cubed
2-3 celery stalks - chopped
1 cup chicken or turkey stock
3 eggs - beaten
1/2 onion - chopped

Preheat your oven to 350 degrees. Butter a casserole dish and set aside. In a bowl mix bread cubes, chopped celery and onion. Add to this the beaten egg and mix well. Pour in, just until damp, the stock. Press into balls and arrange in the buttered casserole dish. Bake, uncovered, for 30-45 minutes.
