Today was all about food apparently. I worked on some things for my historic food blog ( here ) and now that it's time for supper, I am cooking again.
Along with our chicken, fish and peas, we are having potato cakes. The recipe is inspired by one that comes from the Amish Country Cookbook and is as simple as it gets.
Ingredients:
2 cups mashed potatoes (from last night's supper)
2 rounded tablespoons flour
sprinkle of chives
2 eggs
sprinkle of onion powder
Mix all together and fry on a griddle over low heat with butter. Fry over low heat gives them a chance to set.
