Well, it's that time of year again. Time to get out the plan from last year and see how we can make it better. This year we are adding a salsa garden to the list along with our corn field, that we added last year, and the raised bed garden, that we do every year.
I started working on this years plan the other evening and I have the final touches done on the raised bed garden. My raised beds will hold Broccoli, peas, spinach, zucchini, eggplant, cucumber, carrots, strawberries, sweet potato, tomato, peppers, potato, onions and herbs. If we have a dry spring, like this past year, I will plant green bush beans, bush limas, butternut squash, and watermelon between the beds. The goal is to harvest enough fresh produce to eat in season.
The corn field will be enlarged and planted to give us several harvests of corn. We love corn on the cob but also want to can and freeze some. I'd like to try planting some pole beans in the corn field as well. It should be fun and interesting to see the beans climb the corn. Also, if we have a wet spring, I will be planting the watermelon and pumpkin there.
The salsa garden is our big project for this year. We didn't get many tomatoes last year so we didn't make much sauce. I would like to grow enough so that we can make sauce, salsa and try making ketchup. We plan on having tomatoes, of course, sweet peppers, jalapeno peppers, garlic, onions, and cilantro. We are going to try planting in rows instead of clusters. The biggest issue is that we are using an area that hasn't been tilled so we will see how it goes.
