Old Time Oatmeal Bread


This is my new favorite bread recipe! It’s whole wheat and moist. The kids love it!

5 teaspoons of yeast
1/2 cup of warm water
pinch sugar
Combine these in a bowl and set aside for 5 min.
1 1/4 cup boiling water
1 cup rolled oats
1 cup honey
1/3 cup melted butter
1 tablespoon salt
Combine these in a bowl and set aside until oats are soft.
5 cups whole wheat flour
2 eggs, beaten

In a bowl pile the flour and then make a well in the center. Add the eggs, the oat mixture and the yeast. Mix with a spoon until most or all of the flour is incorporated. Knead for 5 min, adding up to 1 more cup of flour to make a soft dough that is not dry or sticky.

Place in a buttered bowl and cover with a dish towel to rise until double (about 1 1/2 hours).

Punch down and let rest for several minutes. Butter and flour two bread pans. Divide dough in half and shape into loaves. Place in buttered pans and let rise for 45-60 minutes or until as high as desired.

Bake at 375 for 40 minutes, covering after the tops have browned to your liking.

Enjoy!

You can also add quick oats to the outside for added decoration. This will also identify your loaves as oatmeal with just a glance. I don't generally do this for everyday bread.
