Chicken Salsa Over Rice


There really couldn't be an easier recipe than this. It's one of my family's favorites and a great "go to" when we are in a rush. It's ready in 30 minutes.

Ingredients:
Rice (we prefer Jasmine rice)
Salsa (whatever is your favorite)
Chicken 
Salt and pepper to taste 

Directions:
Cook the rice according to package directions. The types we use are done in about 30 minutes.
Cut chicken into bite sized pieces and cook until done. Drain any fat from the chicken and add your favorite salsa. Bring to a simmer until desired temperature. We like ours piping hot.
Serve over rice. 

We enjoyed this dish topped with cheese and served with mixed beans (pintos and black beans), fried polenta, and a salad.
